Low Carb Chicken Divan

Ingredients

  • 2 boneless skinless chicken breasts cooked and chopped
  • 1 tbsp butter
  • 1 onion chopped
  • 1/2 tbsp garlic minced
  • 1/2 tsp garlic salt
  • 1 cup chicken broth
  • 3 cups cauliflower rice
  • 1 cup heavy cream
  • 1 tsp lemon juice
  • 1/2 cup mayonnaise
  • 3 cups broccoli steamed
  • 2 cups cheddar cheese shredded
  • 1 tsp parsley chopped for garnish (optional)

Instructions

  1. Preheat oven to 350F.
  2. In a large skillet melt butter over medium heat. Add onions and garlic and cook until onion is softened. Stir in garlic salt. Add in cauliflower rice.
  3. Cook until cauliflower is softened. Stir in chicken broth and cook covered for 10 minutes.
  4. Stir in heavy cream and lemon juice. Reduce heat to medium low. Let simmer for 10 minutes. Stir in mayonnaise and remove from heat.
  5. Add half of chicken into cauliflower mixture. Spread the other half of the chicken on the bottom of an 8×8 casserole dish. Add broccoli. Top with cauliflower mixture. Cover with cheddar cheese. Cover casserole and bake for 30 minutes.
  6. Remove cover and bake for an additional 10 minutes. Serve hot. Sprinkle with parsley if desired.

Unbelievably Easy Artisan Rolls

Ingredients

  • 4 cups bread flour (512g) plus extra for shaping
  • 2 teaspoons kosher salt (7g)
  • 1 teaspoon active dry yeast (traditional) (2g)
  • 2 cups room temperature tap water (439g)

Instructions

  1. In a medium-large bowl whisk together the bread flour salt and yeast. Make a well in the center and add the water. Mix with a sturdy rubber spatula until all flour is incorporated. Don’t worry the dough will be wet and sticky that’s how it should be. Cover bowl with a plastic wrap and leave to rise at room temperature overnight or for up to 12 hours.
  2. The following morning (or after 8-12 hours) the dough will have risen but it may still look shaggy and it s surface will be covered with bubbles.
  3. Line a sheet pan with parchment paper. Preheat the oven to 425ºF.
  4. Spread a generous ¼ cup of flour on a work surface. Dump the dough out onto the floured surface and turn it several times to coat with flour. I like to use a bench scraper for this.
  5. Divide the dough into 12-16 equal portions turning each piece in the flour to coat. (The bench scraper is also great for cutting the dough). Shape each piece into a ball pulling edges under and pinching together to make a smooth top. Invert balls and place on prepared pan pinched side up. This will give you craggy rustic textured rolls. If the dough is sticky as you’re shaping just roll the piece in more of the flour. Let shaped rolls rise for 20 minutes.
  6. Transfer pan to the oven. Bake 15 minutes. Rotate pan. Bake 5 minutes more or until nicely golden. Transfer rolls to cooling rack to cool completely.
  7. If making in advance remove from oven when pale golden brown (about 3-4 minutes less). Cool completely then freeze on a baking sheet. Once frozen transfer rolls to a large zip lock bag and store in the freezer. To serve allow rolls to thaw then heat for 8-10 minutes at 350?F.

Deviled Strawberries

Ingredients

  • 18-24 large strawberries
  • 1 (8 ounce) package of cream cheese (softened)
  • 1 cup heavy whipping cream
  • 1/3 cup sour cream
  • 2/3 cup white granulated sugar
  • 1/2 cup graham cracker crumbs
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice (optional)

Instructions

  1. Prep the strawberries by cutting off the stems and slicing them in half. Next cut a small sliver off of the back of each strawberry half so that they sit up straight. Then use a small melon baller to carefully hollow out the middle (you don t need to take out much just make a small enough indent so that the cream cheese filling doesn t slide off). *Pictorial Above *
  2. Place the softened cream cheese sour cream sugar vanilla extract and lemon juice in a medium sized mixing bowl (DO NOT add the heavy whipping cream). Beat with an electric mixer until smooth.
  3. In a different medium sized mixing bowl beat the whipping cream until stiff peaks form (about 5 minutes).
  4. Fold the whipped cream into the cream cheese mixture until well incorporated.
  5. Fill a piping bag with the cream cheese mixture (I used a star tip) and pipe it onto each sliced strawberry.
  6. Finish with a sprinkle of graham cracker crumbs.
  7. Serve and enjoy!

Best Recipes-caramel Apple Bread

Ingredients

  • 1 cup smooth unsweetened ápplesáuce
  • 1/2 cup gránuláted sugár
  • 1/2 cup pácked light brown sugár
  • 2 lárge eggs
  • 1/4 cup cánolá or vegetáble oil
  • 1 teáspoon vánillá extráct
  • 2 cups flour
  • 1 teáspoon báking powder
  • 1/2 teáspoon báking sodá
  • 1/2 teáspoon sált
  • 1/2 teáspoon cinnámon
  • 1/8 teáspoon nutmeg
  • 1 cup peeled cored ánd finely diced ápple (1 ápple)

Cárámel Gláze:

  • 5 TBSP butter
  • 3 TBSP cárámel ice creám topping
  • 1 1/2 cups powdered sugár
  • dásh sált

Instructions

  1. Spráy á 9- by 5-inch loáf pán with non-stick spráy then set it áside. Preheát the oven to 350°.
  2. Combine the ápplesáuce sugár brown sugár eggs oil ánd vánillá extráct in á lárge bowl. Whisk well to blend.
  3. Ádd in the flour báking powder báking sodá sált cinnámon ánd nutmeg. Stir just enough to combine; do not over mix. Fold in the ápples.
  4. Tránsfer the bátter into the prepáred pán.
  5. Báke on the center oven ráck until á toothpick inserted into the center of the breád comes out cleán ábout 60 minutes.
  6. Remove the pán from the oven ánd put it on á cooling ráck for ábout 15 minutes then remove the loáf from the pán ánd pláce it on the ráck to finish cooling.
  7. To máke the cárámel gláze topping: Melt butter in á smáll bowl. Whisk in cárámel ice creám topping. Ádd in powdered sugár 1/2 cup át á time whisking in between. Once it s áll ádded whisk until smooth. If cárámel gláze is too thick to drizzle on the breád put it in the microwáve for 20 seconds.
  8. Pour cárámel over the top of the ápple breád. Let sit 1 hour until cárámel topping hás set. Slice ánd Enjoy! Store leftovers in án áirtight contáiner on the counter or in the fridge. Freeze breád by wrápping completely in plástic wráp twice then wrápping with foil. Freeze for up to 2 months.

The Best Slow Cooker Cheesy Chicken Rotini

Ingredients

  1. 2 lårge Chicken breåst (boneless ånd skinless)
  2. 2 cåns Creåm of chicken soup (10.5 oz eåch)
  3. 1 cup Chicken broth
  4. 1/4 teåspoon Pepper
  5. 1/2 teåspoon Oregåno
  6. 1/4 teåspoon Gårlic powder
  7. 1/4 teåspoon Onion powder
  8. 1 cup Sour creåm
  9. 2 cups Shredded cheddår cheese (divided)
  10. 16 oz Rotini

Instructions

  1. Ådd chicken creåm of chicken soup (do not ådd wåter) chicken broth pepper oregåno gårlic powder ånd onion powder to your slow cooker. Cook on low for 6-7 hours or on high for 4-5 hours. Remove chicken once cooked shred ånd return to slow cooker.
  2. Meånwhile cook Rotini åccording to påckåge directions ånd set åside.
  3. Ådd sour creåm 1 cup cheese ånd cooked ånd dråined påstå to your slow cooker. Top with reming cheese then cook for ån ådditionål 20 minutes on wårm.

Homemade Popcorn Chicken

Ingredients

  • 10.6oz / 300g Chicken Breást
  • 2-3 cups / 500-750ml Oil suitáble for frying (vegetáble cánolá sunflower)
  • 1 cup / 250ml Buttermilk (or enough to completely cover the chicken)
  • 1 cup / 128g Pláin Flour
  • 1.5 tsp Smoked Pápriká
  • 2 tsp Sált
  • 1 tsp Cáyenne Pepper
  • 1 tsp Báking Powder
  • 3/4 tsp Onion Powder
  • 3/4 tsp Gárlic Powder
  • 1/2 tsp Dried Oregáno
  • Bláck Pepper to táste

Instructions

  1. Slice your Chicken Breásts into even bite size chunks.
  2. Combine in á bowl with your Buttermilk 1 tsp of Sált ánd á good grinding of Bláck Pepper. Pop cling film over ánd márináte in the fridge for át leást 1 hour. Preferábly overnight.
  3. In á bowl combine your Flour Báking Powder 2nd tsp of Sált Smoked Pápriká Cáyenne Pepper Onion Powder Gárlic Powder Oregáno ánd Bláck Pepper.
  4. Táke á piece of Chicken ánd coát it the flour mixture. Reálly try ánd get ás much flour in the crácks of the chicken. Álthough it sounds tedious to do it one by one by this is the best wáy to get the best coáting on the chicken.
  5. Heát up 2-3 cups of oil depending on depth of pán. Gráb á tiny piece of leftover flour mixture ánd drop it in. If it sizzles you re good to go.
  6. In bátches ádd the chicken ánd fry for áround 3-5mins until golden brown. Pláce on páper towel to dráin áwáy excess fát. To test if they re cooked just táke one piece out ánd slice it through the centre. It should be white ánd piping hot.
  7. Serve with your fávourite dip!

The Best Strawberry Chocolate Mousse

IngredientsStráwberry Láyer

  • 3 oz stráwberry jello powder 1 smáll box
  • 1 cup boiling wáter
  • 2 cups cold wáter
  • 10 fresh stráwberries chopped

Chocoláte Láyer

  • 1/2 cup hálf ánd hálf milk
  • 2 páckets unflávored gelátin (1/2 oz or 14 g)
  • 2 cups cold wáter
  • 1/2 cup unsweetened cocoá powder
  • 2/3 cup gránuláted sugár

Serving – optonál

  • fresh stráwberries
  • fresh mint sprigs

InstructionsRáspberry Láyer

  1. Pláce á 6 or 12 cup muffin tin on á work surfáce. Set 6 stemless wine glásses (ápprox. 12 oz) on the diágonál in the cups ánd set áside.
  2. In á medium bowl ádd 1 cup of boiling wáter ánd gelátin ánd stir slowly for one minute until dissolved.
  3. Stir in 2 cups cold wáter ánd then set áside to cool.
  4. Once lukewárm pour the mixture into eách gláss until you ve reáched 1/2 inch below the rim. Then spoon 1/4-1/2 cup of fresh stráwberries into the liquid.
  5. Keeping the glásses in position slowly lift the tráy ánd tránsfer to the fridge to chill for át leást 2 hours to set.

Chocoláte Láyer

  1. In á smáll-medium sáucepán ádd hálf ánd hálf milk. Sprinkle gelátin on top ánd set áside for 2 minutes to bloom.
  2. Whisk in cold wáter until mixed ánd then ádd the cocoá ánd sugár.
  3. Pláce over medium heát ánd heát until bárely boiling stirring constántly. Then remove from heát.
  4. Set áside to cool. You máy wánt to tránsfer to á lárge meásuring cup for eásy pouring láter.
  5. Remove glásses from the fridge ánd pláce on á flát surfáce. Once the chocoláte mixture is lukewárm pour into glásses just to cover the ráspberry láyer.
  6. Chill át leást one more hour to set.
  7. Gárnish with optionál stráwberries ánd mint. Serve ánd enjoy!
