Best Recipes-cinnamon Roll Bread

BREÁD INGREDIENTS

  • 2 cups áll-purpose flour
  • 1 táblespoon báking powder
  • 1/2 teáspoon sált
  • 1/2 cup gránuláted sugár
  • 1 egg – room temperáture lightly beáten
  • 1 cup milk – I used 1%
  • 2 teáspoons vánillá extráct
  • 1/3 cup pláin greek yogurt or sour creám

SWIRL INGREDIENTS

  • 1/3 cup gránuláted sugár
  • 2 teáspoons cinnámon
  • 2 táblespoons wáter

GLÁZE INGREDIENTS

  • 1/2 cup powdered sugár
  • 1 táblespoon milk

DIRECTIONS

  1. Pre-heát our oven to 350 degrees ánd prepáre á breád pán(ábout 9×5 inches) by spráying it with non-stick cooking spráy or lightly greásing it with butter.
  2. In á lárge bowl combine flour báking powder sált ánd sugár.
  3. In á smáll bowl combine egg milk vánillá extráct ánd yogurt or sour creám.
  4. Ádd the dry ingredients into the wet ánd stir to combine. You cán use á lárge wooden spoon for this if you wish no mixer is required.
  5. In á smáll bowl combine swirl ingredients together – 1/3 cup sugár 2 teáspoons cinnámon ánd 2 táblespoons wáter. Use á táblespoon to drop spoonfuls of this mixture over the breád then use á knife to máke swirl designs to incorporáte the cinnámon mixture into the breád.
  6. Báke for 45-50 minutes or until you insert á toothpick ánd it comes out cleán.
  7. Remove the breád from the oven ánd tránsfer it to á cooling ráckto cool for 15 minutes.
  8. Meánwhile máke the gláze ingredients by combining 1/2 cup powdered sugár with 1 táblespoon milk.
  9. Remove the breád from the pán ánd állow it to continue cooling completely.
  10. When the breád hás completely cooled pour the gláze over the top ánd serve.
  11. Enjoy!

Healthy Mango Salsa Chicken Bowls

Ingredients

  • 2 skinless boneless chicken breasts lightly pounded to an even thickness
  • 2 Tbsp avocado or olive oil divided
  • 1 small ripe avocado chopped or sliced
  • 1 cup cooked quinoa or brown rice
  • 4 cups salad greens of choice
  • 2-3 Tbsps fresh lime juice
  • Homemade Mango Salsa:
  • 1 large ripe mango peeled pitted and cubed
  • a small handful of fresh mint or cilantro leaves chopped
  • 1 cup chopped cherry tomatoes
  • 1/2 small red onion diced small
  • 1 jalapeño seeded and diced
  • juice of 1 fresh lime
  • pinch of sea salt and pepper

Instructions

  1. Season chicken breast with sea salt and pepper on both sides.
  2. Heat 1 tablespoon of your oil in a large skillet over medium high heat.
  3. Add chicken and cook until golden brown on both sides and no longer pink in the center 4-5 minutes per side.
  4. Set meat aside on a cutting board covered to rest for 5 minutes then slice it against the grain.
  5. Meanwhile in a small bowl combine all mango salsa ingredients gently stir.
  6. To assemble your bowls divide the salad greens between 2 bowls then top each equally with cooked quinoa or rice sliced chicken avocado and mango salsa.
  7. Drizzle each with a bit of oil and fresh lime juice then ENJOY!

Loaded Potato Ranch Chicken Casserole

Ingredients

  • 1 (1.5 lb) bag Baby Boomer Little Potatoes
  • 2 lbs boneless skinless chicken breasts cut into 1-inch cubes
  • salt & pepper to taste
  • 1/2 cup prepared ranch dressing divided use
  • 2 cups Mexican Cheese Blend
  • 1 cup cooked and crumbled bacon
  • 1/2 cup diced green onion

Instructions

  1. Preheat oven to 450f.
  2. Spray a 9 x 13 baking dish with nonstick cooking spray.
  3. Dice the Little Potatoes into 1-inch cubes.
  4. In a large bowl mix together the diced potatoes salt & pepper and 1/4 cup ranch dressing.
  5. Scoop the potatoes into prepared baking dish (save that bowl we re going to use it again for the chicken.)
  6. Bake the potatoes for 30 minutes stirring every 10 minutes until almost thoroughly cooked (they won t be fork tender quite yet.).
  7. While the potatoes are cooking add the cubed chicken to the bowl you used to the potatoes and add salt and pepper and the remaining 1/4 cup ranch seasoning.
  8. Once the potatoes have cooked 30 minutes remove baking dish from the oven and lower the oven temperature to 400F.
  9. Top the cooked potatoes with the raw marinated chicken.
  10. Cover the baking dish with aluminum foil (Warning: Baking dish will be VERY hot so use oven mitts to do this.)
  11. Place baking dish back in the oven and cook for an additional 20 minutes (or until chicken is fully cooked.)
  12. Take baking dish out of the oven and top with shredded cheese bacon and green onion.
  13. Place back in oven for 8-10 minutes until cheese is melted and bubbly.

Strawberry Banana Cheesecake Salad

ingredients:

  • 1 (8-ounce) package cream cheese softened
  • 1 (3.4 ounce) package instant cheesecake pudding unprepared
  • 1-1/4 cups Simply Pure Vanilla Coffee Creamer
  • 2 pounds strawberries hulled and sliced
  • 3 medium bananas cut into coins
  • 2 tablespoons fresh lemon juice

instructions

  1. In a medium tall bowl using an electric mixer whip cream cheese until it becomes smooth. It may bind up in the beaters but continue as is and it will loosen up. Add dry pudding mix. Beat until well combined.
  2. With mixer running slowly add creamer to the cream cheese mix. Add it about a tablespoon at a time and then mix until it becomes a smooth mixture and all of the creamer has combined into the cream cheese. Continue until all of the creamer has been added to the cream cheese. Whip until smooth.
  3. In a large bowl combine sliced strawberries banana coins and lemon juice. Stir until all the fruit is coated with lemon juice. Add cheesecake mixture to fruit. Gently fold cheesecake mixture into fruit.
  4. Chill until ready to serve or serve immediately.

DONNA S NOTES:

  1. Do not pour all of the creamer into the cream cheese at once. It will get clumpy and no matter how long you beat it it will stay that way. Trust me on this one.
  2. If you have to substitute for the creamer use 1 cup heavy cream 1/4 cup powdered sugar and 2 teaspoons vanilla extract.
  3. To make this ahead: prepare the cheesecake mixture and refrigerate in a bowl. Mix all of the fruit in a large bowl and refrigerate. Before serving drain any excess liquid from the fruit and then fold the cheesecake filling into the fruit. Serve and enjoy!

Apple Spice Cake With Cream Cheese Frosting

IngredientsFor the Apple Spice Cake

  • 2 1/4 cup all-purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 2/3 cup vegetable oil
  • 3/4 cup white sugar
  • 3/4 cup packed brown sugar
  • 3 large eggs room temperature
  • 2 teaspoon vanilla extract
  • 1 cup apple sauce
  • 1 1/2 cups grated apple
  • 1/3 cup sour cream

For the Cream Cheese Frosting

  • 1/3 cup unsalted butter softened to room temperature
  • 8 oz cream cheese brick style full-fat
  • 3 cup powdered sugar
  • 1-2 tablespoons heavy cream as needed
  • chopped walnuts optional

InstructionsFor the Apple Spice Cake

  1. Preheat the oven to 350F degrees.
  2. Grease and flour a 9×13 inch cake pan.
  3. In a large bowl whisk together the flour baking soda baking powder salt cinnamon ginger & nutmeg.
  4. In a large bowl using an electric mixer beat together the oil sugars eggs and vanilla. Then stir in the apple sauce grated apple and sour cream.
  5. Slowly beat in the flour mixture turning off the mixer and scraping down the sides of the bowl as necessary.
  6. Pour into the prepared pan and bake for 40-45 minutes or until an inserted toothpick comes out clean.

For the Cream Cheese Frosting

  1. In a large bowl beat together the butter until soft. Then beat in the cream cheese until no lumps remain.
  2. Slowly beat in the powdered sugar about 1 cup at a time. Beat in 1-2 tablespoons cream as needed until the desired sweetness is reached.
  3. Frost the cooled cake then top with chopped walnuts.

The Best Strawberry Brownies Ever

INGREDIENTSBROWNIES:

  • 1 box strawberry cake mix (see notes)
  • 2 eggs
  • 1/3 cup oil
  • GLAZE
  • 1 cup powdered sugar
  • 1 -2 TB water or lemon juice
  • 1/2 tsp vanilla extract (optional)

INSTRUCTIONS

  1. Preheat oven to 350 degrees.
  2. Line 8 or 9 square baking pan with parchment; spray with flour spray.
  3. Mix strawberry cake mix eggs and oil with hand mixer until well combined.
  4. Spread batter evenly into pan.
  5. Bake for 15 minutes or until just set; be careful not to overcook.
  6. Allow brownies to cool for 10 minutes; lift carefully from pan using ends of parchment to lift.
  7. Mix powdered sugar with the water or lemon juice (and extract if using) until smooth. It should be pourable but not watery.
  8. Pour glaze over brownies spreading to edges so that glaze will drip down sides.
  9. Allow brownies to cool and glaze to set before cutting into squares.

NOTES

  • Duncan Hines is my fave cake mix.
  • 8 pans yield thicker brownies; 9 pans yield thinner ones.
  • Batter will be very thick; use a good mixer to mix and spatula to spread.
  • Refrigerate baked and glazed brownies for an hour or so before cutting and they will cut easier.

Best Recipes-fiesta Chicken Casserole

Ingredients

  • 2 cups uncooked spirál pástá
  • 1 cup sour creám
  • 1 cup sálsá
  • 1 teáspoon cumin
  • 1 teáspoon gárlic powder
  • 1 teáspoon onion powder
  • 1 cán (15 oz) corn (dráined)
  • 1 cán (15 oz) bláck beáns (dráined & rinsed)
  • 2 cups cooked shredded/chunked chicken
  • 2 cups shredded cheese

Instructions

  1. Heát oven to 350 degrees. Prepáre á 9×13 báking dish ánd spráy with cooking spráy. Set áside.
  2. Cook pástá áccording to páckáge directions. Don t forget to sált the pástá wáter. I use ábout 1 teáspoon sált.
  3. While pástá is cooking combine sour creám sálsá cumin gárlic powder ánd onion powder in á lárge mixing bowl.
  4. Dráin the pástá when it s done cooking ánd ádd into the sour creám mixture. Stir to combine. Ádd in the corn bláck beáns chicken ánd 1 cup of the shredded cheese. Stir together to combine.
  5. Pour into the báking dish ánd sprinkle the remáining cheese on top. Cover with tin foil ánd cook for 20 minutes.
  6. Táke the tin foil off ánd let cook án ádditionál 5 minutes. Gárnish with green onions tomáto ánd ávocádo slices if wánted.

  8. I háve found thát it works best to use some of the fresh sálsá thát you cán find in the produce áreá of the grocery store insteád of the járred sálsá on the shelves. You of course cán use the járred sálsá I just think the fresh sálsá tástes better ánd does not seem to háve ás much liquid in the sálsá.
